Sourdough Cookies

 


DRY INGREDIENTS

  • 1¾ cup all-purpose flour
  • 1 teaspoon sea salt
  • ¼ teaspoon baking soda
  • ½ teaspoon baking powder


WET INGREDIENTS 1 (in a separate bowl mix)


WET INGREDIENTS 2 (in a separate bowl mix)

  • 8 tablespoons unsalted butter (cold, cubed)
  • ½ cup brown sugar
  • ½ cup white granulated sugar
  • 1 ½ cups chocolate chips (or nuts or any mix of fixings you wish up to 1 ½ cups)


Phase I


Use a whisk or a fork to mix the all-purpose flour, baking soda, baking powder and salt in a small bowl. Set aside.


Phase II


In a separate small bowl, use a whisk or a fork to beat the egg, vanilla extract and sourdough starter until smooth. Set aside.


Phase III


Place the cold, cubed butter, light brown sugar and granulated sugar into the bowl of a stand mixer with the paddle attachment. 


Beat on low-speed until small crumbles form, about 60 seconds. Add the chocolate chips and mix on low-speed about 45 seconds. 


Scrape down the sides of the bowl. Add the Phase I dry ingredients and mix on low-speed until the batter starts to become a crumbly mixture, 20-30 seconds. 


Pour in the Phase II egg & starter blend and mix on low-speed until the dough comes together and starts to pull away from the sides of the bowl, about 30 seconds. 


Use a spatula or your hands to stir the thick batter, ensuring all of the ingredients have been fully incorporated. 


Makes 18-20 cookies. 


Roll the dough into golfball-sized balls & chill the dough in the fridge for a minimum of 2 hours. (24 hours is best for full fermentation benefits!) You can put your cookie dough balls in a freezer bag & pop them in the freezer after 24 hours in the fridge for easy-grab fully fermented sourdough chocolate chip cookies! Just bake them straight from the fridge or freezer 15-20 minutes on 375°

Ps. While it's never recommended to eat raw cookie dough it is particularly unsafe to do so with sourdough cookie batter. Tell the kids! Tell the hubby. There is no question - you absolutely can not eat raw sourdough cookie dough balls or you WILL have some uncomfortable tummy issues. You probably won't die but don't tell the kids that. I leave a scary note on mine while they proof overnight in the fridge 🤣
